SPAM® Turnovers with Raisin and Tomato Puree

There are only two kinds of people in the world. The ones that love raisins, and the ones that don’t. But trust us, even if you don’t like raisins, you would want to try this recipe.

Ingredients

  • 256g all-purpose flour
  • 3g salt
  • 151g cup unsalted butter
  • 1 pc egg yolk
  • 5ml white vinegar
  • 59ml cup cold water
  • Filling
  • 59ml cup tomato sauce
  • 20g raisins
  • 45ml olive oil
  • 20g chopped onions
  • 10g chopped garlic
  • 22g diced carrots
  • 22g cup diced potatoes
  • 16g frozen peas
  • 1/2 can SPAM® Classic diced
  • 1 pc egg, beaten

Directions

  1. Make the dough by combining flour and salt. Cut in butter using a fork until it resembles breadcrumbs. Add yolk, vinegar and cold water. Knead until it forms solid dough. Divide into 12 balls, cover, and rest for 20 minutes.
  2. To make the filling, combine and blend tomato sauce and raisins in a blender. Set aside.
  3. In a pan with hot oil, sauté onions and garlic for 1 minute. Add carrots, potatoes, and peas.
  4. Add SPAM® and tomato mixture. Simmer for 2-3 minutes or until the mixture has thickened. Chill in the refrigerator.
  5. Preheat oven at 190⁰C.
  6. Roll each dough individually into rectangles. Fill 6 dough with 2 tablespoons of the filling. Cover with another dough and seal edges using a fork. Brush with egg wash and bake in oven for 30 minutes or until golden brown.
