SPAM® Tocino Japchae

Ingredients

  • 500g Japchae Noodles (dangmeyon) / Sweet potato starch noodles
  • 1/2 can of SPAM® Tocino
  • 2 medium carrots, cut in thin strips
  • 4 cups of fresh Spinach (blanched and squeezed to remove excess water)
  • 1 medium bell pepper (cut in thin strips)
  • 1 medium white onion (cut in thin strips)
  • 2 cups of fresh shiitake mushrooms (cut in strips)
  • 8 tbsp soy sauce
  • 4 tbsp brown sugar or honey
  • 4 tbsp roasted sesame oil, separated
  • 1/4 tsp ground black pepper
  • 2 tbsp toasted sesame seeds
  • 2 large eggs (beaten, cooked, and sliced into thin, long strips)

Directions

  1. Cook the noodles according to package instructions. Cut to shorter lengths if desired and set aside.
  2. In a bowl, combine soy sauce, brown sugar or honey, and 2 tbsp of sesame oil and mix
  3. thoroughly.
  4. Add sliced mushrooms into the marinade and set aside.
  5. Cut SPAM® Tocino into cubes and cook according to instructions on the can label. Set aside.
  6. Heat cooking oil in a skillet (about 2 tbsp.) and cook onions until soft and translucent. Set aside.
  7. In the same hot skillet and adding more oil if needed, stir-fry carrots for about 30 seconds. Add the bell pepper and stir-fry for another 30 seconds. Set aside.
  8. Add a little more oil to the hot skillet. Remove mushrooms from marinade and cook until soft and tender. Set aside.
  9. In a big bowl, mix the cooked noodles and about ¾ of the marinade until fully coated.
  10. Toss in the SPAM® Tocino cubes and all the cooked vegetables. Adjust with more marinade mixture to taste.
  11. Transfer to a serving dish. Garnish with sliced egg strips, sesame oil, and toasted sesame seeds.
