SPAM® Pizza Casserole

When zoo animals get hungry, you tame them with food to keep them happy. Same with teens. When they get hungry, throw some of these zesty, satisfying casserole their way. Otherwise, those wild, ravenous beasts are going to turn your kitchen into a zoo.

Ingredients

  • 2 (12-ounce) cans SPAM® Oven Roasted Turkey, cut into 1/2-inch cubes
  • 1 (10.75-ounce) can Cheddar cheese soup
  • 6 cups frozen shredded hashbrown potatoes, thawed
  • 1 large egg, lightly beaten
  • 1 (4-ounce) can mushroom stems and pieces, drained
  • 1 onion, chopped
  • 1/4 teaspoon pepper
  • 1 (14 to 16-ounce) jar pizza sauce
  • 1/2 teaspoon salt
  • 4 cups shredded pizza cheese blend
  • 1 tablespoon vegetable oil

Directions

  1. Heat oven to 400ºF.
  2. Grease a 15x10x1-inch baking pan.
  3. In a medium bowl, combine the potatoes, soup, egg, salt, and pepper; mix well.
  4. Spread the mixture evenly in the baking pan.
  5. Bake for 20 to 22 minutes or until lightly browned.
  6. Meanwhile, in a large skillet, heat oil over medium heat.
  7. Add the SPAM® Oven Roasted Turkey, onion, and mushrooms.
  8. Cook for 5 to 8 minutes or until lightly browned.
  9. Stir in pizza sauce.
  10. Sprinkle hot potato crust with 2 cups cheese.
  11. Top with SPAM® mixture and remaining 2 cups cheese.
  12. Bake for 5 to 7 minutes or until cheese is melted.
  13. Cut the pizza into squares.
